This bread reminds me of an old timey Jewish New York Deli. Traditional Jewish rye sourdough bread is speckled with caraway and Iike most of my sourdoughs goes through a multi stage 24 hour fermentation process creating a deliciously flavorful bread with the added texture and crunch of the caraway which is loaded with fiber, minerals and antioxidants adding a nutritional bonus.
This bread is much lighter than whole rye breads as it is blended with white wheat flour, but still has the properties of a whole wheat bread so it may get less of a rise than you're used to in my 'Straigh Up' white sourdough bread, It's definitely more flavorful.
Fun Fact: Did you know that the Caraway we buy is not a seed? It's actually the dried flower pod of the caraway plant!
