4 Lachoch's per serving
I know Lachoch from the yemenite quarter in Tel Aviv which is my favorite neighborhood on earth, sitting right on the beach and full of old vendors, winding alleys, smells of spices from the market and locked in time. Lachoch is a soft spongy flat bread, similar to the Ethiopian injera but made with regular flour mixed with some durum flour (what pasta is made of). Although this bread might remind you of a pancake, it is made with yeast not baking soda and is not fried and in fact has no oil in it at all! It's the perfect bread to dip onto something moist like a sauce or a soup and you can also put spreads on it and call it a very special sandwich. My kids can't get enough of it and let's face it, the adults love it too.
